Function
Egg yolk powder is a kind of food with high nutritional value. As a natural food emulsifier, it is widely used in food processing. Egg yolk powder is mainly used for extracting lecithin from food industry raw materials and medicine industry, bakery food, cold drinks (ice cream, ice cream) and full-price nutritional formula food in food industry. The emulsification of egg yolk powder is mainly due to lipoprotein (especially low density lipoprotein which accounts for 65% of total protein) and its component lecithin (about 75% of phospholipid). Protein contributes more to emulsification than phospholipid. Pasteurization is an indispensable step to improve the microbiological index of egg products. However, egg yolk begins to solidify around 65℃, and its emulsifying ability decreases greatly, especially for products with high oil content, such as mayonnaise (oil content reaches 70% ~ 80% O/W system), which has high requirements for egg yolk emulsification, and pasteurization is easy to affect product performance. Because the sterilization intensity is too low, it will not be conducive to the shelf life of the product; Too high sterilization intensity will lead to product stratification, seriously affect the sensory quality.
