Glutathione (GSH), also known as glutathione or glutamine, is a tripeptide composed of glutamine, cysteine and glycine. Its first peptide bond is different from ordinary peptide bonds. It is composed of the γ-carboxyl group of glutamic acid and the amino group of cysteine. In the molecule, the cysteine hydroxyl group is the main functional group of the compound. Glutathione is an antioxidant found in plants, animals, fungi, and some bacteria and archaea. Glutathione can prevent damage to important cell components caused by reactive oxygen, free radicals, peroxides, lipid peroxides and heavy metals. As an antioxidant in animal cells, it exists in water-filled cells and can protect DNA from oxidation. Glutathione exists in the human body in two forms: reduced and oxidized. For example, when a small amount of H2O2 is generated in the cell, GSH reduces H2O2 to H2O under the action of glutathione peroxidase, and itself is oxidized to GSSG. GSSG is reduced to GSH by H under the action of glutathione reductase present in the liver and red blood cells, so that the free radical scavenging reaction in the body can continue.
Glutathione can reduce tyrosinase activity in three different ways.
1. Tyrosinase is directly inhibited by chelating copper sites with sulfhydryl groups.
2. Glutathione interferes with the cellular transfer of tyrosinase to premelanosomes, a prerequisite for melanin synthesis.
3. Third, tyrosinase inhibition is achieved indirectly through its antioxidant effects. Glutathione shifts melanogenesis from eumelanin to pheomelanin synthesis through a reaction between sulfhydryl groups and dopaquinone, resulting in the formation of sulfhydryl-dopa conjugates. Glutathione has a strong antioxidant capacity and has been shown to scavenge reactive oxygen species generated in epidermal cells induced by UV radiation.

Glutathione is widely used in the food industry. It can be added to yogurt and baby food to act as a stabilizer. It can also be added to meat, fish and seafood to inhibit nucleic acid decomposition. Adding it to pasta can shorten the mixing time of bread.
Cosmetic Applications:
