What is stachyose?
Stachyose is a saccharide formed by combining two α-galactoses with 1,6-glycosidic bonds on the glucose side of sucrose. The molecular formula is C24H42O21. 22%, refreshing taste and no peculiar smell. Soluble in water, insoluble in ether, ethanol and other organic solvents.
Stachyose has good thermal stability and will not decompose at a high temperature of 100°C, but its thermal stability decreases under acid conditions, so it can be used in foods that require autoclaving. The storage stability in an acidic environment is related to temperature, and it is quite stable when the temperature is lower than 20 °C. The moisture retention and hygroscopicity are lower than that of sucrose but higher than that of high fructose syrup, and the osmotic pressure is close to that of sucrose. Above 80°C, stachyose has coloring properties and can be added to baked goods to give the food an attractive burnt yellow color
