Niacin, also known as vitamin B3, is one of the water-soluble B vitamins. Niacin occurs naturally in many animal foods such as poultry, beef and fish in its highly bioavailable forms NAD and NADP. Plant foods such as nuts, legumes and grains contain it mainly in the form of niacin (nicotinic acid). Natural nicotinic acid (niacin) occurs naturally in some cereal products and is mostly bound to polysaccharides and glycopeptides, resulting in only about 30% bioavailability. The free form of niacin, which is highly bioavailable, is added to breads, cereals and infant formulas in the United States and some other countries.

Niacin absorbed by the body is converted in our body tissues to its main metabolically active form, the coenzyme nicotinamide adenine dinucleotide (NAD). In all tissues except skeletal muscle, NAD is also converted to another active form, the coenzyme nicotinamide adenine dinucleotide phosphate (NADP). More than 400 enzymes in the body require NAD for catalytic reactions, a reaction that involves more coenzymes than any other vitamin-derived coenzyme. In addition to this, NAD is involved in energy metabolism and plays a key role in cellular functions such as controlling gene expression. NADP promotes anabolic reactions such as cholesterol and fatty acid synthesis and plays an important role in maintaining cellular antioxidant function.
Severe niacin deficiency can lead to pellagra, a disease that is very rare in industrialised societies. Such diseases are common in people living in extreme poverty and with unbalanced protein intake in their diets. Pellagra is characterised by a pigmented rash or brown discolouration of the skin after exposure to sunlight, which may lead to redness of the tongue, digestive abnormalities, vomiting, constipation or diarrhoea. Neurological symptoms of pellagra include depression, apathy, headaches, fatigue, memory loss to the point of prompting aggressive paranoid behaviour, suicide, hallucinations and hallucinations. 1.Niacin in the field of pharmaceutical synthesis
Niacin is used as a medicine to combat skin diseases and similar vitamin deficiencies with vasodilatory effects. Niacin can also be used as a pharmaceutical intermediate for the synthesis of a variety of amides and esters with important pharmaceutical uses.
2.Application of niacin as auxiliary agent
Niacin is an indispensable food and feed additive for the growth and development of humans and animals. Therefore, niacin is widely used as an additive for pastry, dairy products, cornflour, etc.; niacin can also be used in combination with vitamins to replace some of the nitrites as a deodorant or preservative for meat products, and in addition, niacin can be used as a preservative for vegetables. In electroplating, nicotinic acid is also an excellent brightening additive, as long as 1-10g of nicotinic acid is added to each litre of electroplating solution, it will have a remarkable effect. Nicotinic acid is used as antioxidant and anti-gray mist agent in photographic materials. Will be 0.1% of the nicotinic acid aqueous solution added to the photographic emulsion, can increase the stability of the photographic material to the light; in each millilitre of the photographic emulsion to add 5-20mL 0.1% of the nicotinic acid aqueous solution can reduce the photographic material of the grey haze.
