    Arginine, with the chemical formula C6H14N4O2, is an α-amino acid (α-amino acid) because the hydrogen atom (αH) on the carbon atom connected to the carboxyl group (-COOH) is replaced by the amino group (-NH2), which can be represented by R-CH(NH2)-COOH.
Arginine has two stereoisomers in nature, namely the L-type that can make polarized light left-handed and the D-type that is right-handed. Among them, the L-type is more common in nature and is also more important and common in biology, medicine and nutrition.

 

In Vitro Synthesis
(1) Hydrolysis method
Hydrolysis was the main method for producing arginine in my country in the early days. The principle is that amino acids are the basic building blocks of proteins. Amino acids can form peptide bonds (dipeptides) through dehydration condensation. This process can produce long-chain polypeptides and then synthesize proteins. Therefore, L-arginine can be extracted by hydrolyzing the proteins in animal hair and blood and then separating and purifying them.
Although my country has abundant sources of pig hair and pig blood, this method has the disadvantages of high cost, poor product (quality) stability, and poor sanitary conditions. Therefore, it is not suitable for large-scale industrial production and is difficult to be applied in the health care products and pharmaceutical industries.
(2) Chemical synthesis method
There are many methods for synthesizing arginine in industry, but most of them involve toxic, dangerous, and controlled raw materials, such as acyl chloride, carbonate, and hydrocyanic acid, which are subject to certain restrictions in actual production.
(3) Microbial fermentation method
The microbial fermentation method uses cheap carbon sources (mostly glucose and molasses) and nitrogen sources (such as yeast extract) as raw materials, and directly synthesizes L-arginine through the metabolic decomposition of microorganisms and the fermentation of glucose. It has the advantages of low cost, mild reaction conditions, and high controllability. Therefore, it is currently the main method for producing arginine in the world.

(6) Arginine and sugar can be heated to produce substances with special fragrance, so it can be used as a food additive and applied to food processing in accordance with GB 2760-2011 (National Food Safety Standard), such as seasoning and supplement.
